Wine and Music: The Young: Staying In

Parmesan Crisps

Staying In

Parmesan Crisps3/4 Cup Grated Parmesan Cheese Fresh basil, sage or terragan (optional)

These delicious snacks are easy to make and will be the perfect accompaniment to just about any wine you are serving. Coarsely grate about 3/4 of a cup of Parmesan cheese and add fresh herbs, like basil, sage or tarragon, to your liking. Spoon 1 to 2 teaspoon of the Parmesan on to a cookie sheet, and place them about two inches apart. Use the back of the spoon to slightly spread the parmesan mounds. Sprinkle tiny bits of sprig flakes on top of each mound. Bake in 350 degree oven until the mounds are melted and golden brown. This should take about 3 to 4 minutes. Let the cool for a few minutes and serve or store in a cookie jar. (Makes 12 wafers)
